1892 年，William Grant 在废弃的 Balvenie New House 建立了百富酿酒厂，酿酒厂归 William Grant & Sons Ltd. 所有，于 1893 年 5 月 1 日开始酿造威士忌。1923 年，William Grant 去世后，他的儿子 John Grant 接管了酒厂并对其进行了第一次扩建。1929 年，酒厂采用传统的铺地发芽方法取代了原有的麦芽制造工序，这一方法也沿用至今。1962 年，17 岁的 David Stewart 开始在 William Grant & Sons Ltd. 工作，在作为学徒的 12 年间，他掌握了酿造最佳单一麦芽威士忌（Single Malt Whisky）的精湛工艺，并于 1974 年成为百富的第四任酿酒大师。1983 年，David Stewart 首次连续在两种不同类型的木桶中进行百富威士忌熟成试验，这在后来被称为“Finishing”。通过该方法酿成的酒液就是后来的百富经典系列（The Balvenie Classic）。作为在苏格兰威忌卡行业从业时间最长的酿酒大师，David Stewart 对威士忌可谓是了若指掌。
在 Whisky 酿造上，百富恪守五大超凡工艺，坚持传统的制作方式。首先，百富坚持自产大麦，是苏格兰高地地区唯一一家仍然自己种植大麦并进行麦芽处理的酿酒厂。每年，酒厂会在百富梅茵斯农场（Balvenie Mains）种植大麦，除了大麦收割时使用的联合收割机外，其余环节皆沿用传统的人工种植方式，这也是造就百富单一麦芽威士忌独特性的原因之一。除此之外，百富拥有自己的发芽床（Malting Floor），这在苏格兰已经十分少见了。
酒厂先将大麦浸泡在泉水中，之后平铺在传统的发芽床上，由麦芽工匠进行手动翻转。发芽的大麦会被转移到干燥炉内，利用无烟煤和适量的泥煤进行干燥，以增添百富威士忌的混合口感。再者，酒厂使用的蒸馏器也十分别致，其天鹅颈状曲线的底部有一个凸出的球，被称作“Balvenie Ball”，百富威士忌酒瓶的瓶颈也保留了这一设计特征，这种设计使得蒸汽在上升至顶部前有更多的混合时间。铜质蒸馏器的形状和大小是影响百富威士忌口感至关重要的两大因素，酒厂有专门的铜匠团队对其进行精心维护。同时，酒厂也十分注重木桶的准备和维护，拥有一个专门的桶匠团队进行处理，这对百富威士忌的口感起著至关重要的作用。桶匠们对木桶进行适度烘烤，将木糖转化成焦糖，让木桶的“毛孔”完全打开。整年整日，他们都以精湛的工艺对酒厂木桶进行修复、重建、填充和封装。最后，酒厂的酿酒大师，著名的David Stewart，拥有丰富的知识和经验，熟知每个木桶的熟成过程，这也是百富酿造顶级单一麦芽威士忌不可或缺的重要因素。
百富现有 Core、Rare & Precious、Travel Retail、From the Tun、Single Barrel 和 DCS Compendium 六个系列的威士忌。其中，前 5 个是百富的单一麦芽威士忌系列，而 DCS Compendium 系列是酿酒大师 David Stewart 特旨在使自己的酿酒知识传承下去而创造的系列，共分为五个篇章，每个篇章包含 5 款酒，前四章分别为蒸馏之术（Distillery Style）、橡木之力（The Influence of Oak）、窖藏之秘（Secrets of the Stock Model）和期待未知（Expecting The Unexpected），最后一章仍在创作之中。百富出产的威士忌风味独特，品质优秀，是苏格兰威士忌中的上佳之品。
